Need recipes for a possible BC cookbooklet


How about sharing your favorite healthy-eating recipe?

I'll share one of mine....it works best with an electric quesadilla maker...but you could probably get the same effect with a skillet and something to weight it down (another smaller skillet)....

SPINACH AND FETA QUESADILLAS

Whole wheat tortillas
Fresh spinach
Fat-free feta cheese
Sweet onion (like vidalia)
Cilantro
Tomato, thinly sliced and pressed to remove excess water
Thinly sliced orange or yellow pepper
Balsamic vinegar (I used Balsamic Vinegar Salad Spritzer by Wish Bone)

Build the quesadilla by piling on fresh spinach, thinly sliced sweet onion, tomato, pepper slices and cilantro. Top with fat free feta. Then drizzle lightly with balsamic vinegar or use the salad spritzer. You can add salt if you like; I omit because the feta contains salt. Top with another whole wheat tortilla then cook in your quesadilla maker. It is good by itself but I have also served it with a jalapeno/tomatillo salsa and some nonfat or lite sour cream. It would also be good with fresh basil and drizzled before cooking with a little lemon juice and olive oil. If you are preparing in a skillet, you will cook on each side until brown (don't forget to weight the quesadilla down with a heavy skillet while cooking). Slice into wedges with a pizza cutter or sharp knife.

This is a quick and easy meal....I just fixed it for lunch.

here's my cheddar quesadilla recipe; get a tortilla, grab some cheddar cheesse and put on tortilla, fold tortilla and microwave for 30 seconds, voila! a super fast meal for lasy people

That would make a nice side dish or appetizer...though I'd probably go with low fat or nonfat cheddar; would be a nice accompaniment to a bowl of soup or chili.

I agree the man has to cook, LOL. I also LOVEEEEEEEEEEEE salads. Balsamic vinegar is awesome stuff. But raised on a dairy farm I need meat, chicken, eggs, at least once every two weeks.

MANDARIN SALAD

________________________________________
1/4 c. sliced almonds
1 tbsp. + 1 tsp. sugar
1/4 head lettuce
1/4 head Romaine lettuce
1 c. chopped celery
2 green onions with tops, chopped
11 oz. drained mandarin oranges

Sweet-Sour Dressing
Cook almonds and sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool and break apart, store at room temperature. Place all lettuce, celery, and onions in plastic bag. Pour Sweet Sour Dressing into bag, add oranges. Close bag and shake until salad greens and orange segments are well coated. Add almonds and shake.
Do Ahead Tip: Before dressing is added, bag of salad greens can be closed tightly and refrigerated up to 24 hours.
Sweet-Sour Dressing for Mandarin Salad.
1/4 c. vegetable oil
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. snipped parsley
1/2 tsp. salt (opt.)
Dash pepper & red pepper
Shake all ingredients in tightly covered jar. Refrigerate. Use with Mandarin Salad.

Yummm....that sounds amazing; I have most of the ingredients; think I'll try it this weekend. Thanks for your contribution. Healthy eating can be good eating....and I think it is part of our spiritual obligation to eat nutritionally, healthfully. Can't wait to try your recipe and will include it in the BC cookbooklet. Know you can't be there but will find a way to get you a copy.

Thanks!! I enjoyed that....many cooks on here after all! Perhaps I should change the cookbook to just any recipe...rather than healthy ones; I could organize them in chapters and have the healthy ones in a separate chapter for folks that like to eat that way.

My kids and their friends have always loved my nachos.

1. I take a cookie sheet and cover it with aluminum foil then spray it with Pam or whatever non-stick spray I have.

2. Preheat oven to 350.

3. Then I spread Dorita's or some type of chip (whatever is on sale) over the entire sheet.

4. Next I cook a can of refried beans in a pot on the stove. Be sure to stir often to avoid sticking, I find it best to not cook on high also.

5. Spoon the refried beans onto the chips.

6. Sprinkle low-fat or regular shredded cheddar cheese over everything.

7. Cook until cheese melts, 5-10 minutes at most and voila.

Can serve with sour cream, guacamole, etc if you wish or add jalapenos, olives and other things.
